Airplay is no longer supported for use with Netflix because of technical constraints.
As to why

According to Netflix, AirPlay is no longer supported due to “ technical constraints on iPhone, iPad, or iPod touch. ” there aren’t any details from Netflix about.
And this, from Netflix’s official service page (the page is titled “How do I use my cellular device to watch Netflix in my TV? ”):

Juli Clover, MacRumors:
The Netflix program for iPhone and iPad seems to support AirPlay, based on an updated service record found on the Netflix site.

“We want to make sure our members have a Netflix encounter. With AirPlay support switching to third party apparatus, there isn’t a means for us to differentiate between devices (what’s an Apple TV vs. what isn’t) or reevaluate these experiences. Thus, we have opted to stop for seeing is being fulfilled Netflix AirPlay support to ensure our standard of quality. Members may continue to get Netflix on the program that is built-in across other devices and Apple TV. ”

’ s AirPlay staff could work out some kind of whitelist for devices that handle AirPlay and Netflix In that case, seems like Apple. After all, when a TV won’t support Netflix enough, it won’t support AirPlay .

Hard to suss out the reasoning behind this choice. Is this about quality of quality?
